This week I threw together this recipe last minute, and I was quite pleased with how it turned out. I can always count on my Crock Pot when I don’t know what we should have for dinner — it never fails me. Savory Balsamic Chicken spiced with basil and oregano are a great combo for our family. My husband lived in Italy for two years, so good olive oil and balsamic vinegar flavors are popular in our house. I usually can’t go wrong with Italian recipes as long as I make sure to cook the pasta al dente.
Here’s the recipe for you:
- 2-3 lbs chicken breast
- ½ cup olive oil
- 3 tbsp balsamic vinegar
- 1 tbsp black pepper
- 2 tsp basil
- 2 tsp oregano or rosemary
- ½ lb baby carrots
Put the chicken, oil, vinegar, and spices in the Crock Pot. Make sure each piece of chicken is fully coated in oil and balsamic vinegar. Cook on low for 6 hours. Add the carrots the last two hours (the carrots soak up all of the balsamic flavors if you add them sooner).
We kept it simple and served this with baked potatoes, but this meal would be delicious with rosemary potatoes, an Italian salad, or fresh bread that you can soak in olive oil and balsamic vinegar. Hope you enjoy!
Update: I made extra of this recipe, froze it for later, and discovered that it is freezer friendly! It cooks well on high in the slow cooker and still makes a great dinner.
