Sugar-free Healthy Oatmeal Cookies

You guys, it’s ready! I have been working on this recipe for two years, and I am so thrilled to finally share the perfected version with you! I really LOVE my original oatmeal chocolate chip cookie recipe, and I would eat those cookies every day if I could. The problem with that is that they’re loaded with sugar, so they need to be consumed sparingly. I set out to create healthy oatmeal cookies, and I made several batches that were pretty bad.

Finally, I discovered a PERFECT zero-calorie sweetener to complete my healthy oatmeal cookies. Lakanto Monkfruit Sweetener is so good, and I’m so happy with it! Monk fruit extract is a natural sweetener that is 200 times sweeter than sugar. It bakes so much like sugar, so it’s truly the best sugar substitute I’ve ever used. Unlike some other sweeteners, monk fruit does not have a bad aftertaste. It’s just pure, natural sweetness. I’m a big fan!

How to make your delicious, healthy oatmeal cookies:

This recipe can be made in the same order as a normal cookie recipe. I was so happy when the sweetener whipped together with the butter so well. After you whip the butter and sweetener together, add the eggs and the vanilla and almond extracts. I highly recommend using pure vanilla extract because it has zero calories (and it makes everything so much more delicious).

Since I’m in love with almond extract, I decided to make this an almond-oatmeal cookie recipe by using almond flour. Another benefit is that almond flour is low-carb. It has a great texture, and I’m really happy with how it turned out in this recipe.

After you mix in the dry ingredients and the oats, you’ll be ready to bake! After my first batch, I gave in to my kids’ requests for chocolate chips and added them to the dough. The chocolate chips were not sugar-free, but they were so good that it was worth it! Each sugar-free cookie has about 100 calories, and each chocolate chip cookie has about 130 calories.

  • 1 cup butter unsalted
  • 1 cup Lakanto Golden Monkfruit Sweetener

  • 1 tsp vanilla extract

  • 1 tsp cinnamon
  • 1/8 tsp nutmeg

Instructions
  1. In a small bowl, mix almond flour, spices, salt, and baking soda. Set aside.
  2. In a large bowl, use an electric mixer to beat the softened butter with the Lakanto monkfruit sweetener.
  3. Add the eggs and the vanilla and almond extracts, then keep mixing.
  4. Use a spoon to fold in the oats.
  5. Preheat the oven to 350 degrees.
  6. Scoop dough onto a cookie sheet and flatten it slightly.
  7. Bake for 10 minutes.
  8. Let cookies cool on cookie sheet for about 5 minutes or until the center has solidified, and then move them to a cooling rack.
