Keto cookies are a brilliant way to satisfy your sweet tooth without all the carbs and sugar. When you mix the right ingredients, you can create a sweet treat that’s actually healthy! Doesn’t that just sound wonderful?
I have always thought that the ketogenic diet was a good idea. It just makes sense to me. If you don’t give your body the primary fuel source that it wants (a.k.a. carbohydrates), then it can release fat from your adipose tissue to create the glucose and energy that fuels your body. I think this diet is genius, but it is not easy!
I LOVE carbohydrates. When I was a little girl, my favorite food was bread. I was a picky eater, and sometimes bread was the only thing I would eat. As I’ve grown up, I don’t consider myself picky anymore – I’m willing to try new things, and I strive to have a well-balanced diet. Although, I still have a soft spot for bread and sweet treats. That makes sticking to a ketogenic diet pretty tricky. Luckily, I have two secret weapons that make it easier for me to stick to my goals: Lakanto Monkfruit Sweetener and almond flour.
The Perfect Ingredients for Keto Cookies
To create these keto cookies, I modified a snickerdoodle recipe to be sugar-free and low carb. My life has transformed since I discovered monk fruit sweetener. I have been able to create a cinnamon-sweetener blend that tastes just like cinnamon-sugar! If you’ve ever seen my Protein Cinnamon Rolls recipe, you know how much I am obsessed with cinnamon. Being able to have cinnamon treats without the sugar brings me so much joy.
I also love using almond flour because it bakes well and is low in carbs. It comes with its own mild taste, so your baked goods won’t taste exactly the same as they do with white flour, but it will still make deliciously healthy keto cookies!

- 1 tbsp cinnamon
- 2 tbsp Lakanto Classic Monkfruit Sweetener
- 2 tbsp Lakanto Golden Monkfruit Sweetener

- Combine flours, baking soda, and 1/2 tsp cinnamon. Set aside.
- In a large bowl, mix softened butter with 1/2 cup of each Classic and Golden monk fruit sweeteners.
- Add the eggs and the vanilla extract. Then, keep mixing.
- Add combined dry ingredients to your mixture.
- Preheat oven to 350 degrees.
- Combine the remainder of cinnamon and sweeteners in a small bowl.
- Roll one-inch balls of dough in the cinnamon mixture.
- Slightly flatten each cookie and place on a lined cookie sheet.
- Bake for 12-15 minutes until cookies are raised and golden-brown.
- Remove from the oven and let cookies cool on cookie sheet for 2-3 minutes before moving to a cooling rack.
