Easy Protein Cinnamon Rolls

These are the best cinnamon rolls! So delicious! They are made from Kodiak Cakes Power Flapjack Mix, which is full of protein. They are perfect for dessert or a great addition to a nutritious and healthy breakfast.

I am in love with pretty much any combination of butter and cinnamon sugar! Cinnamon rolls are hands down my favorite treat. I could probably eat them every day – that’s the problem. It would be unacceptable to eat cinnamon rolls all day, every day. Not to mention I would be void of nutrition. My love for sweets has inspired me to find a healthier version of all my favorite treats, and these protein cinnamon rolls are my first success!

The secret that makes them delicious and nutritious is Kodiak Cakes pancake mix. One of my favorite breakfasts is Kodiak Cake pancakes with scrambled eggs, but breakfast is not the only thing that this glorious mix is good for. It makes amazing desserts! Every serving of the mix contains 14 grams of protein.

Protein Cinnamon Rolls made Healthy and Sugar-free

2018 Update: Ever since discovering zero calorie monk fruit sweetener, I’ve been obsessed with creating sugar-free desserts. Looking back at my original protein cinnamon rolls recipe, I realized that just adding protein doesn’t make it healthy when I leave all the sugar in it. Luckily, the solution is so simple. Just replace the sugar with monk fruit sweetener! I use the same cinnamon-sweetener mixture in my Keto Snickerdoodle Recipe, and it is so good!

Dough
  • 3 cups Kodiak Cakes Power Flapjack Mix
  • 1 cup milk
  • 1/4 cup butter softened
  • 1/2 tsp cinnamon
  • 1 tsp vanilla extract
Filling
  • 3/4 cup butter melted
  • 1/2 cup brown sugar (or sub Lakanto Golden)
  • 3/4 cup granulated sugar (or sub Lakanto Classic)
  • 2 tbsp cinnamon
Icing
  • 2 cups powdered sugar (or sub Lakanto Powdered)
  • 2 tbsp milk
  • 1/2 tsp almond extract

Instructions
  1. Preheat the oven to 400 degrees.
  2. Prepare the filling by mixing the melted butter, sugars, and cinnamon. Set aside.
  3. Stir together all of the ingredients for the dough and knead it until it's ready to roll.
  4. Flour a surface and your rolling pin and roll the dough into a rectangle.
  5. Spread the cinnamon filling onto the dough and roll it into a tube.
  6. Use floss or string to tie off the tube into equal pieces and lay them onto a baking dish.

  7. Bake for 20 to 25 minutes.
  8. While the rolls are baking, mix together the icing.
  9. When the rolls are finished, pour the icing on top, let them cool, and enjoy!
Recipe Notes

I recommend rolling the cinnamon rolls up from the long direction so that you make many small rolls rather than a few large ones. These rolls will turn out crispy and crumbly, in a delicious way!

      Thanks, Marti! I love this pancake mix so much! Pancakes and cinnamon rolls are actually the only ways that I have used it because I’m obsessed with cinnamon rolls. If I ever create anything else with it, I’ll definitely post it on this blog!

    Do you think I could make these ahead of time, keep in fridge and bake a day or two later? I want to bring to cabin where we have an oven but work space is limited.

      Hi, Jana! I’m pretty sure these can be made ahead of time and be fine in the fridge, but I haven’t tried that with this exact recipe. Since it’s made from Kodiak Cakes instead of a traditional dough, I think they’ll be able to hold their shape just fine. Good luck! I hope they turn out delicious for you!

    no yeast is necessary? do they rise at all? they look delicious!

      Hi Stephanie! No yeast is needed. They will rise a little bit, but not as much as normal cinnamon rolls. I hope you enjoy them!
