I love tortellini! My husband is the pasta expert in our house, but when it comes to tortellini, I’m all over it. I love how easy prepared tortellini is to create a dinner with. All of the hard work is already done; I just have to spice it up to make it delicious. One of my friends chose this meal from New Nostalgia for our monthly freezer meal club, and I’m so glad she did! I’ve been looking for ways to add more nutrients to our easy pasta days, and I’m quite pleased with this recipe. With a whole bag of spinach in this soup, my family gets some greens while barely noticing that they are there. It’s nutritious and delicious — definitely a win-win!
I made this soup in the crock pot, but it could easily be made on the stove top as well. I just love how the cream cheese mixes with the tomatoes to create that filling, creamy flavor. It reminds me of a sweet Rosa sauce for pasta. In fact, I’m thinking of using these ingredients with less vegetable broth to make a pasta sauce. I’ll let you know how it turns out.
