I love tortellini! My husband is the pasta expert in our house, but when it comes to tortellini, I’m all over it. I love how easy prepared tortellini is to create a dinner with. All of the hard work is already done; I just have to spice it up to make it delicious. One of my friends chose this meal from New Nostalgia for our monthly freezer meal club, and I’m so glad she did! I’ve been looking for ways to add more nutrients to our easy pasta days, and I’m quite pleased with this recipe. With a whole bag of spinach in this soup, my family gets some greens while barely noticing that they are there. It’s nutritious and delicious — definitely a win-win!
I made this soup in the crock pot, but it could easily be made on the stove top as well. I just love how the cream cheese mixes with the tomatoes to create that filling, creamy flavor. It reminds me of a sweet Rosa sauce for pasta. In fact, I’m thinking of using these ingredients with less vegetable broth to make a pasta sauce. I’ll let you know how it turns out. This healthy, creamy tortellini soup is delicious and so easy to make! It is full of nutrients with the spinach and tomato. It's the perfect dump it, set it and forget it meal for the Crockpot. If you don't want to wait for the slow cooker, then you can just make it on the stove-top. It's amazing!

Ingredients
- 16 oz package of tortellini
- 6 oz package of fresh spinach
- 2 cans diced tomatoes (15 oz cans)
- 4 cups vegetable broth
- 8 oz cream cheese (1 block)
- 2 tsp basil
- 1 tsp oregano
- 2 tsp black pepper
- fresh basil to taste

Instructions
- Add all ingredients except tortellini to crock pot.
- Cook on low for 4 hours.
- Add tortellini last 30 minutes.
- Serve when the tortellini are al dente.
Recipe Notes
- Cut cream cheese into blocks before adding to pot.
- If cooking on a stove top, put all ingredients in pot, bring to a boil, then add tortellini.
