Early Fall is one of my very favorite times of year. I love the crisp, cool air, the cardigan weather, and all things pumpkin! You may have heard me say this before, but I am obsessed with pumpkin recipes! I try several new pumpkin recipes every fall, and they are usually sweet treats that everyone loves. This year, I am focusing on recipes that are healthy. I have compiled this list with healthier versions of your favorite sweets, plus savory dinner recipes. Pumpkin has a lot of nutrients when you don’t add all the sugar!
1. Healthy Pumpkin Pancakes with Protein
This first one is my very own recipe. Our family loves Kodiak Cakes Protein Flapjacks. So, I combined two of my favorite things by adding some pumpkin and spice. This breakfast vanished almost instantly! Check out the recipe here, or go here to save the pin for later.
2. Pumpkin Pie Protein Shake
I love having protein shakes for breakfast! When I wake up groggy in the morning and my three boys are all crying for me, I have to get nutrition in my body fast. Once I’ve had a shake, I can conquer the world (usually). My favorite shakes are IdealShape. They taste good and have all the nutrients a busy mama needs. I really like a lot of their flavors, but I also use vanilla flavor as a base for my own shake recipes.

3. Healthy Pumpkin Chili
Chili is a perfect fall meal already. Then, when you add pumpkin, it’s just perfect. I can’t wait to make this recipe!

4. Creamy Pumpkin Spaghetti
Pasta is another family favorite of ours. Pumpkin spaghetti sounds wonderful to me!

5. Maple Pumpkin Oatmeal
Oatmeal makes a wonderful, filling breakfast. Maple and pumpkin spice just makes it all that much better.

6. Healthy Pumpkin Oatmeal Cookies
This is my favorite recipe of all! For a long time, I have been trying to create a healthier version of my favorite Oatmeal Chocolate Chip Cookie recipe. I haven’t quite mastered making my cookies without all the sugar yet. That’s why I love this cookie recipe. With stevia, pumpkin, and pumpkin spice, you don’t even need sugar!

7. Pumpkin Oatmeal Energy Bites
I love energy bites! I make some almost every week because it’s my kids’ favorite food. Instead of rolling them into balls, I put the mixture onto a cookie sheet, refrigerate it, and then cut it into bars. It makes a great snack!

8. Pecan and Pumpkin Pie Dump Cake
Okay, this last recipe may not be the healthiest of all, but don’t we all need a nice pumpkin treat on Thanksgiving? If you can’t choose between pecan and pumpkin, have them both with this cake!
